Dr Aimee Pink completed her PhD in Psychology at Swansea University examining the personality traits and psychological factors that influence emotional eating.
Today, Aimee’s research still focuses on the psychosocial influences of food choice and eating behaviours, covering topics such as portion size and food insecurity in addition to emotional eating. Her latest research specifically focuses on child and parent perceptions of novel foods, and she is passionate about understanding how these fit into an individual’s diet, developing ways of educating consumers on their manufacturing process and identifying interventions to increase acceptance by consumers.

In 2023, he founded Enzyme, an implementation-focused consultancy that champions holistic regeneration across food systems and the tourism industry. At Enzyme, Andrew applies a systems-based, holistic strategy, connecting stakeholders and leveraging his deep industry and consumer insights to maximize end-buyer and consumer engagement, largely working with AgriFoodTech start-ups to navigate the complexities that come with pitching novel products and services.
Andrew’s relationship with edible insects commenced in 2013 following sharing a panel with the Senior Researcher at Nordic Food Lab at Noma in Copenhagen. This experience catalysed his initiative to introduce these sustainable protein sources into restaurants and bars he collaborated with in Australia. His efforts have since sparked vital conversations at food festivals, science events, and regular dining venues, highlighting the significant role of insect-based products in future food strategies, thanks to their nutritional benefits and sustainable footprint. His professional journey with non-edible insects started back to 2005, working on Climate Change Research with the Smithsonian alongside a team of dynamic entomologists, and again working with biopesticides as part of his Honours project while completing his Bachelor of Technology Innovation (Microbiology).
His contributions are now extending into academia, where he serves as a guest lecturer and researcher across Australia, Singapore, and the region on dancing with the complexities within food systems. A sought-after speaker at conferences, he delves into topics like regenerative tourism, supply-chain dynamics, and the future of F&B. His insights, drawn from experiences that include leading procurement at global hotel companies and Michelin-starred restaurants, are pivotal in driving sustainable change that has traction in-market.
With a unique perspective and a thorough understanding of the food and beverage sector's complexities, Andrew is a valued voice in discussions on sustainable food sources, especially within the APAC context. Andrew Powell graduated from the University of Edinburgh with honours in Biology and obtained his Ph.D. from the University of Calgary, Canada. He has held research and academic positions at the University of Guelph, Canada, the National Institute for Health Sciences in Tokyo, Tsukuba, Japan, and the National University of Singapore.
From 1994 to 2005 he has worked as a consultant assisting a wide range of clients (e.g. Quintiles, Syngenta, Agrium, CIDA, Enterprise Ireland, GTZ, CropLife Asia, Canadian Government) in their activities in biotechnology across East Asia. He founded Asia BioBusiness with Professor Paul Teng in 2005 and continued his consulting activities.
He has considerable experience in stakeholder dialogues, facilitations, and public fora across the region and in Australia and is invited regularly to chair conference sessions at global technology conferences.
Over the last 15 years he has been active in Risk Communication, conducting training and offering advice to both public and private sector clients. He is the co-author with Dr Andrew Roberts of “The Lowdown: Risk Communication, Dodging the Bullet in Controversy and Crisis” published by Creative Content Digital, London and available via iTunes, Audible, and as an eBook (launch September 2010).
Andrew was a member of the Alberta Government’s Research and Innovation Advisory Committee (ARIAC) from 2017 to 2019. He is also on the Advisory Committee of The Scientific American / BioIndustry Organisation Worldview Publication. From 2012 to 2017 he sat on the advisory board for Syngenta’s Rice Bowl Index. Dr Andrew Wan, Senior Principal Scientist at the Singapore Institute of Food and Biotechnology Innovation (SIFBI), A*STAR, is a co-I of the `CRISP Meats’ cultivated meat programme, where he leads the effort on edible cell culture supports.
He is a pioneer of the interfacial polyelectrolyte complexation (IPC) fibre technique for scaffold engineering, which has been applied to both biomedical and food areas. This fibre spinning and assembly technique has demonstrated its value in creating 3D-patterned cell constructs for tissue engineering and has been more recently adapted to the structuring of food products with realistic textures and alternating nutrient components. He has been ranked amongst the top 2% of scientists in Biomedical Engineering by single year and career long impact (Ioannidis, 2023).

Dr. Li Xu is a Senior Principal Scientist II at Institute of Sustainability for Chemicals, Energy and Environment (ISCE2), A*STAR, where he leads Sustainable Packaging Group dedicated to studying polymer composite for sustainable food packaging. The main research focus of his team is 1) design and synthesis of high-performance polymer materials and functional fillers and 2) incorporation of functional filler into polymer material with controlled filler distribution and tuned interfacial bonding between filler and polymer matrix to produce high performance polymeric materials. As an Adjunct Associate Professor at the Department of Food Science and Technology, NUS, his study is on food preservation by using hybrid polymers.
He has successfully developed transparent hierarchical silicate polymer composite with excellent oxygen barrier, oxygen scavenging and antimicrobial performance. The composite also shows very good UV shielding property after further introducing ferric complexes onto silicate sheets. In order to explore these technologies for food packaging application, in 2012, he initiated the Industry Coating and Packaging (ICAP) consortium aiming to advance pre-competitive research in industrial coating and packaging to enable the adoption of these platform technologies through synergistic partnerships.
So far, he has contributed more than 140 peer-reviewed papers in scientific journals with H-index of 56. His oxygen barrier and oxygen scavenging technology has been successfully integrated with polyolefin to produce recyclable mono-polyolefin food packaging. He was awarded the Shimadzu-SNIC Industry Award in Applied and Translational Chemistry in 2023.

Prof Matthew Tan, an aquaculture veteran and Food Security specialist, is currently Singapore Representative (Private Sector) to APEC Policy Partnership on Food Security and is also the current APEC Chair for Sustainable Development in Agricultural and Fishery sectors (PPFS) where he co-ordinates discussions between senior officials, APEC governments and the private sector on the use of technology and combined resources for Sustainable Development.
In tandem with his current APEC appointment, Prof Tan is also serving as the Chief Executive Officer (Asia) of Assentoft Aqua Asia Pte Ltd.

During his illustrious career in the Republic of Singapore Navy, he represented the Singapore Ministry of Defence as the Defence Attache in Beijing, chaired a working group at the United Nations Department of Peacekeeping Operations, commanded a surface ship and a submarine, and held the appointment of Head Naval Research. Prior to this, he was the Global COO of New Ventures, the center of environmental entrepreneurship at the World Resources Institute, where he led the organization’s office in Washington, D.C. and helped its local centers in Brazil, China, Colombia, India, Indonesia, and Mexico double their collective investments to nearly $400 million within two years.
Tao also has extensive investment and operational experiences in the telecom and high-tech sector, through roles as assistant president of Asia-Pac at Convergys and leadership roles in strategic venture investments in Asia at Verizon. Tao began his career as a European Union economic affairs correspondent with China’s state-run Xinhua News Agency and also advised Chinese government entities on international economic and commercial policies.

Besides, Weitze also heads the Global B2B business in Dole that manages ingredient business exporting to over 50 markets.
Prior to Dole, Weitze spent several years working as food commodity trader in Itochu Corporation in Japan. When he worked in Itochu Corporation, he was also one of the key members that pursued and completed Dole Business acquisition project ($1.7 Billion) in 2013 and set up the headquarter of Dole in Singapore.
